This deliverable aims to build a training kit to enhance capacity in developing innovative food products, processes, and agri-business models. It also identifies product innovations and provides technical information to facilitate their reproducibility. This report represents a Training Kit that is addressed to local producers and entrepreneurs, but also future stakeholders of local food systems (e.g. academic students).
